Date-palm sap collection is one of rural Bengal's winter traditions, and in Manikganj it underpins the famous hazari gur. Gachhis shave the top of the trunk, fix a bamboo spout and hang a clay pot overnight. At dawn the sap is poured into wide pans and boiled for hours over straw fires. Watching the process early on a foggy morning is the best introduction to the district.
Good to know
Avoid drinking raw sap; it can carry Nipah virus. Try the boiled gur instead.
