Durus Kura
দুরুস কুরা
A whole skinless chicken cooked slowly in a thick, spiced gravy, Chattogram's classic dish for guests and weddings.
Kura is the Chittagonian word for chicken, and durus means the bird is cooked whole. The chicken is skinned, rubbed with ginger-garlic and onion paste and garam masala, then fried and simmered until tender in a thick gravy; some cooks tuck boiled eggs in with it. Families in greater Chattogram have long served it to a new groom or bride and to honoured guests, usually with polao or khichuri.
