Chitoi pitha is made from rice-flour batter steamed in small clay moulds over a wood fire, giving a soft centre and a lightly crisp base. In Noakhali and neighbouring districts, a winter favourite is to pair it with rich duck curry cooked with plenty of onion and spices. Street vendors make them fresh in the early morning and evening.
