Barishal ilish
বরিশালের ইলিশ
Silvery hilsa from the southern rivers, rich and fragrant, best in mustard gravy or fried.
The Meghna, Tentulia and other rivers around Barishal are among the main hilsa grounds of Bangladesh, and the national fish is part of daily life here. Fresh ilish is cooked in shorshe ilish, with a mustard paste, fried crisp with its oil poured over rice, or steamed in banana leaf. The fat, sweet flesh is at its best in the monsoon season. The city's fish markets and river hotels make it an obvious place to try it.
