A Marma meal is light on oil and heavy on fresh chilli and herbs. Tojah is a plate of blanched vegetables like cucumber, cabbage and yardlong beans eaten with a sharp chilli and shrimp-paste dip. Laksu is shredded chicken pounded with raw hill chillies, garlic and onion. Both are eaten with plain rice or binni (sticky) rice, often with stir-fried bamboo shoot in the rainy months.
