During the rainy season, new bamboo shoots push up across the hills, and indigenous families harvest them young and tender. They are sliced and cooked with dried fish, pork, chicken or simply with chillies and herbs, and have a mild, slightly earthy crunch. Many hill restaurants in Bandarban serve bamboo shoot dishes when they are in season.
