Sabitri is made by slowly boiling milk and sugar down into a firm, fudgy sweet with a deep brown colour. It keeps for days without refrigeration, which made it a favourite gift to carry. Meherpur people consider it their own and send it to relatives elsewhere. The taste is rich and milky, like caramelised khoa.
