Kalai Roti
কালাই রুটি
Thick flatbread of black gram flour, cooked on clay and eaten with fiery chilli and onion bhorta.
Kalai roti is made from kalai (black gram) flour, often mixed with a little rice flour, patted out by hand and baked on a clay tawa over a wood fire. It is dense and slightly chewy, with a nutty flavour. The classic accompaniments are a mash of green chilli, onion and garlic, or a bhorta of eggplant, sometimes with duck or beef curry. Chapainawabganj is widely regarded as its home, and it is equally loved across the border in Rajshahi.
Good to know
Eat it hot, straight off the clay pan. Ask for the chilli bhorta mild if you are not used to heat.
