Dinajpur Papad

দিনাজপুরের পাঁপড়

Thin lentil wafers made in thousands of homes in Dinajpur town and sold across the country.

Dinajpur is the papad capital of Bangladesh. In the lanes of Chawkbazar, Notunpara, Basuniapatti, Churipatti, Rajbari and other neighbourhoods, women roll out mung, khesari or mashkalai dough flavoured with cumin, black cumin, chilli and asafoetida into paper-thin rounds and dry them in the sun. Tens of thousands of people earn from it. Fried in hot oil, a papad puffs up in seconds and goes with khichuri or dal-bhat, or is eaten on its own as a snack.

Good to know

Mung papad costs a bit more but is the classic one to buy.
