Small, crisp shingaras from a modest Rangpur shop that has made nothing else so well since 1960.
Kanailal Sarkar opened Shingara House in Rangpur in 1960, and his family still runs it. The shop is cramped and plain, but there is nearly always a crowd for its small shingaras with a spiced potato filling, served with a thin sauce whose recipe the family keeps to itself. Generations of Rangpur people grew up on them. They are cheap enough to order a plateful.
Good to know
Eat them hot at the shop; they lose their crunch in a parcel.
