Chandpur Hilsa

চাঁদপুরের ইলিশ

The national fish at its most celebrated: rich, silvery hilsa from the Padma–Meghna confluence.

Hilsa swim up from the sea into the big rivers to spawn, and the waters around Chandpur are among the most famous places to catch them. Bangladeshis prize the local fish for its oily, delicate flesh and full flavour. Classic preparations include shorshe ilish, steamed in mustard paste, and simple fried slices served with the hot frying oil over rice. Riverside restaurants at Boro Station fry it fresh to order.
